How to grill octopus with aromatic butter
Octopus is a very delicious seafood, and grilling can make them super delicious. It is simple and easy if you follow these instructions. Nothing will go wrong! But remember, this recipe will work only for double-sucker octopuses. Common English one-sucker octopuses should be cooked differently.

Sometimes the price for this octopus can be enormously high in comparison with other seafood, and it is a shame to ruin this delicious product. Therefore, please use this recipe to make it perfectly delicious!

step-by-step instructions

  1. Ingredients. They are simple. can vary them as you like, but this is a basic recipe which will already work perfectly. So you need to have about 1kg of octopuses for 3-6 portions. About 2 teaspoons of salt for boiling. Also, 1tsp of black pepper and 4-5 bay leaves for boiling. 80g of butter, half a bulb of garlic and 1/2 teaspoon of salt for aromatic butter (add a small bunch of parsley for a better taste). A drop of olive oil for serving.

  2. Clean octopuses. This is a bit of dirty work, but nobody will do it for you. Slice the bunch of tentacles in half deep across the body from the water pipe side (belly side). Remove the beak, eyes and remove all intestines from the head. Then wash thoroughly the body of the octopus.

  3. Mix butter with pressed garlic, salt and some herbs if any (sometimes it is difficult to find any herbs in the Philippines, so I will use only garlic).

  4. Boil octopuses in slightly salted water for 1.5 hours until very tender with adding a minimal amount of spices like black pepper and bay leaves. If not sure, check the tenderness with a toothpick or fork.

  5. Take out the octopus from the boiling water and chill it down. Place into a fish basket (can also use the proper cast-iron mesh, but it is a bit more difficult). Octopuses should be placed backside down, or opened side up. Spread the aromatic butter on top of them.

  6. On the medium-high fire grill until the butter starts melting. Then flip them every so often until the butter melts completely and a bit of crust starts to develop. Do not overcook or over-dry on low heat!

  7. Serve, sprinkle with olive oil and enjoy.
