Tartar sauce is one of the best sauces for any seafood, including deep fried one. Therefore, every chef should know how to make tartar sauce. There are plenty of different combinations and variations in proportion list, and it is impossible to say, which tartar sauce is more authentic. In this recipe I will show how to make tartar sauce with tarragon and pickled cucumber.

  1. When you will try to make this sauce, you should understand, that these ingredients are approximate. It is very difficult to repeat exactly volume of chopped herbs, the taste of brined gherkins can change form can to can etc. Therefore, this list of ingredients is only a guideline and the final taste should be adjusted during mixing.
    • 1 cup Mayo. Use the best available, like Hellmann's mayonnaise.
    • 1 medium brined gherkins
    • 1 tbsp capers. You can use either small, dwarf capers, either normal capers, but you should chop them
    • 1 tbsp chopped fresh dill
    • 1 tbsp chopped fresh tarragon

  2. Grate brined gherkin. Chop herbs and add capers to a mixing bowl.

  3. Add mayonnaise and mix well. That is really. It is very important to remember, that herbs, specially dried one, required some tome to develop their aroma and infuse it into a sauce. Therefore it is better to leave this tartar sauce overnight in the fridge.



tips and tricks

  • You can also use dried herbs, but for dried herbs reduce amount of added to a 1 tsp of each.
  • If you prefer to have more sour sauce, you can add a spoon of lemon or capers juice.
