How to smoke chicken in the oven
It is impossible to completely smoke chicken at home in the standard oven, but it is possible to make an almost smoked chicken, which will be even better than standard smoked chicken. The main idea of this dish, is to make proper smoked flavours and cook the chicken the same time. Also roasted chicken produce plenty of dripping chicken juice and fat, which can be used the same time to cook veggies side dish.

step-by-step instructions

  1. Ingredients.
    • Medium chicken, proximately 1.5 kg.
    • Vegetables for the side dish
      • 4 potatoes
      • 2 carrots
      • 1 tomato
      • 2 sweet dwarf peppers, or 1 normal sweet pepper.
      • 1 medium brown onion
    • Unsalted butter, 75 gm
    • Spices
      • Cinnamon, 1 stick
      • Cloves, 10 buds. (nothing wrong will happen if you will take 9 or 11 buds)
      • Star anise, 1 or 2 stars.
      • Black pepper corn, 1/2 tsp
      • Coriander seeds, 1 tsp
      • Salt, 1/2 tsp
      • Sugar, 5 tbsp
    • Rosemary and thyme sprigs.
    • Cypress branch

  2. Mill all spices: cinnamon, cloves, star anise, black pepper corn, coriander and salt.

  3. Split butter into two equal parts and insert under the chicken skin on the breast. This should be done through the neck area.

  4. Place rosemary and thyme inside the chicken. Salt around the chicken neck and tail. Rub all the spices into the chicken skin.

  5. Tie the chicken with the kitchen twines or strings and prepare some free ends to hang it latter.

  6. Fill the deep ceramic baking tray with chopped vegetables, add a bit of salt and fill with boiling hot water, about half litre of water.

  7. Prepare two foil trays, one with sugar and one with chopped cypress.

  8. Hang the chicken at the top centre area of oven. Chicken should be oriented breast down. Place the tray with vegetables exactly under the chicken, to collect all dripping chicken fat and juice. Place foil trays with sugar and cypress somewhere at the bottom of oven. Everything in this arrangement have plenty of sense. Burning cypress will produce some tangy smoking aroma. Melted sugar will make lovely dark colour and sweet taste for the chicken skin. Evaporated water will steam cook the chicken. Dripping chicken fat with juice, filled with spices with infuse vegetables with marvellous aroma.

  9. The total cooking time at 200-210 degrees C should be about 1 hour and 30 minutes. During this time change the cypress, when it will be burned two times. Change burned sugar three times.

  10. Take out chicken and vegetables from the oven and carve the chicken.

  11. Serve chicken with vegetables and enjoy.



tips and tricks

  • Be prepared to have some extra smoke in the kitchen.
  • Be extra careful, when handle the foil tray with melted sugar.
