In this recipe we will roast pork fillet with cheese with minimum spices to preserve and do not mask an original pork taste. This recipe is very quick, simple and do not required any skills for cooking. One pork fillet can be used for one portion, or can be slitted into a smaller portions.

Ingredients for one large portion:
One pork fillet
1-2 slices of Mozarella cheese
2 cloves of garlic
Salt
Olive oil
Thinly slice garlic. Thinner slices are better, because the roasting process will be very quick and thick slices will not be cooked through.
Make deep and wide cuts across the meat grains. Cuts should be about 1-2 cm apart from each other.
Lightly sprinkle meat with salt. Make sure, that some salt go into a cuts.
Insert cheese and garlic slices into these holes. One slice of garlic or one slice of cheese per hole. Alternate cheese and garlic stuffing from hole to hole.
Brush roasting tray with olive oil. Place stuffed pork fillet into a roasting tray and brush it from each with olive oil.
Roast for about 15 minutes at 200 ° C and then finish this meat on the grill for 2-3 minutes. The internal temperature should be about 62-65 ° C, not higher! Rempve from the tray, slice and serve.
