  1. Ingredients for ... let say 3 or 4 portions:
    • Four chicken legs. Actually, this recipe is a bit frivolous, and it is possible to make as much as it necessary.

    • Black, or four pepper mix, to taste.

  2. Few next steps will be dedicated to preparing chicken legs. Despite quite long story, the full cutting process usually takes less than one minute pre one chicken leg.

    Cut off the pelvic bone, if any. Cut through the chicken flesh from an internal side of the leg.

  3. Chop off muscles through the beginning of chicken drumstick

  4. Take off the bone from the meat.

  5. Pound chicken meat from the meat side. It is not necessary to use cling film for pounding, because the pounding should be very light.

  6. Sprinkle each side with salt, grounded pepper and dried thyme.

  7. Place all meat pieces into a tray or place, cover with cling film and keep few hours for marinating in the fridge.

  8. Preheat heavy cast iron skillet to a medium-hot temperature, brush it with oil and fry chicken steaks, skin down about 4 minutes.

  9. Grill meat pounded chicken steak on other side for about 4 minutes, or until ready. Keep all the time medium-hot temperature.

  10. On cooked chicken steak place the slice of butter and serve.



tips and tricks

  • Try thyme is much better for this recipe, because it will pass all aroma much easier.
  • Use chicken bones to make a bit of a chicken stock, which can be used latter.
  • Marinade pound chicken steaks at least 2 hours, but it is perfect to marinate them overnight.
  • Time of cooking is given approximately, and in real life it is necessary to check the doneness at the last minute of cooking.
