  3. Sprinkle one side of the lamb chops with spice mixture.

  4. Preheat heavy cast iron skillet with heavy lid, brushed with olive oil on maximum heat. Place lamb chops on the skillet, seasoned side down, and season other side with spice mixture; Reduce heat to the medium heat and fry two times on each side Season with the spice mixture after each turning; Usually is is enough to fry about 3-4 minutes on each side, for example 2 min + 2 min + 1.5 min + 1.5 min; Switch of the heat and fry lamb chops on the fatty side for 1-2 minutes, to melt extra fat.
