How to make Cajun spice mix
Very popular spice mix used in many dishes from French and Cajun cuisine. It is very simple to make Cajun spice mix by yourself, and also you can adjust the level of chilli in this spice mix by yourself to your taste. This Cajun spice mix can be used in plenty different recipes, which will be described latter.

step-by-step instructions

  1. Ingredients for making ¼ cup of the Cajun spice mix:
    • Salt, 2 tsp.
    • Garlic powder, 2 tsp.
    • Paprika, 2½ tsp.
    • Dried onion, 1 tsp.
    • Black pepper, 1 tsp.
    • Cayenne pepper, 1 tsp.
    • Dried oregano, 1¼ tsp
    • Dried Thyme, 1¼ tsp
    • Chilli flakes, ½ tsp.

  2. Mix all ingredients in mortar and crush them with pestle to powder.

  3. Store in dry, dark place in airtight sealed container.

tips and tricks

  • It is possible to use mixed peppercorns instead of black peppercorns.
  • For this Cajun spice mix, only dried herbs and spices should be used.
  • Adjust the hotness of this mix by amount of chilli flakes added.
  • Do not store ready made spice mix for a long time, it loose plenty of aroma from black pepper and onion.
