How to make a salad with wild mustard flowers and seed pods
Foraging can bring a lot of fresh wild plants to your table and make your food more diverse and more flavour. At the end of June, and beginning of July, there are a lot of yellow flowers growing in every meadow, grassland and woodland edge. This is one of the brassica plants. There are a lot of them, wild mustard, black mustard, Turkish rocket and many others. They are pretty similar in taste and appearance. In this recipe, I will show how to use their flowers and young seed pods. All these brassica plants have similar radish taste.

Unfortunately at the end of June, when they start flowering - the leaves are too old for use in the salads, therefore we can only use flowers and seed pods.

step-by-step instructions

  1. Foraging. First of all, you need to make sure that you identify plants correctly. Secondly, you need to make sure that the area is not polluted with exhaust from busy roads or chemicals from the working area. For this recipe, you can collect flowers and soft green seed pods. Avoid damaged and infected parts of the plant. Later on, you can wash seed pods, but it is virtually impossible to wash flowers without destroying their appearance.

  2. The salad will be very simple, to enjoy the taste and aroma of this wild mustard in full. Also, you need to understand, that you can change the amount of ingredients very easily. Ingredients:
    • Few cherry tomatoes - very ripened and sweet
    • Similar amount of cucumber
    • Few leaves of latuce
    • Olive oil
    • Salt to taste
    • Flowers and green seed pods of wild mustard - as much as you like
    You can ask - should you add some black pepper, so common for this salad and I would like to say NO! The wild mustard will be used instead of this black pepper to give more interesting flavours!

  3. It is up to you how you prefer to chop tomatoes, cucumber and salad leaves. I prefer to chop them finely and tear salad leaves by hand. Also, I removed the hard bit from the tomato centre and piel cucumber from the hard skin.

  4. Soft green seed pods slice finely - they easier give aroma and they will be easier to chew. Add olive oil and salt to taste. Mix everything well.

  5. Add almost all flowers, gently mix everything again and decorate from the top with the last flowers. Everything is ready - enjoy!

  • Do not take unknown plants!
  • Never forage in the polluted areas.
