The taste of any meat can be improved ans accented by properly chosen spices. In this recipe, I will give an almost perfect lamb seasoning, which can be used during cooking and for seasoning of fried, roasted or boiled lamb. This lamb seasoning also improve the appearance of the lamb fat and make it much more edible. Well fried lamb fat with this lamb spice mix is so attractive, that it can be easily eaten in large amount.

Ingredients:
Hot version
Cumin seeds, 1 tsp
Coriander seeds, 2 tsp
Rock salt, 2 tsp
Black pepper, 1 tsp
Aromatic version
Cumin seeds, 2 tsp
Coriander seeds, 2 tsp
Rock salt, 2 tsp
Black pepper, ½ tsp
Warm all spices on frying pan until fragrant. This will allow them to develop maximal aroma.
Ground all spices together in stone mortar with pestle. For serving on table it is necessary to ground them to fine powder. For cooking it will be enough just to crush them.
Serve on shallow tray or apply directly on meat before cooking.

Sprinkle cooked meat with lamb seasoning just before eating.
Store extra spice for few days in a sealed container, but not more than one week, because the aroma will be lost.
