How to make braised turkey wings
Turkey wings are very rich in protein, but the meat can be quite tough. In this article, I will show, how to make braised turkey wings, to make them absolutely tender and full of flavours. These braised wings are full of sauce and they can be perfectly suitable with any side dishes. Average portion could have one or only half of the wing. These braised turkey wings I've decide to prepare, when I've bought new Pyrex cast iron casserole.

step-by-step instructions

  1. Ingredients for 2-4 portions:
    • Turkey wings, 2 wings.
    • Tomatoes, 4 average fruits
    • Onions, 4 average bulbs.
    • Garlic, 1 bulb.
    • Chilli, 1 fruit
    • Red full bodied wine, 50-75 ml.
    • Butter, 2 tbsp, or equivalent of liquid oil for frying.
    • Herbs and spices:
      • Coriander seeds, 2 tsp.
      • Black or mixed pepper, ½ tsp.
      • Fresh basil, medium bunch
      • Salt, 2tsp

  2. Cut wings into a pieces through the joints. Smaller pieces are much more handy for cooking.

  3. Fry turkey wings on high heat for about 3-4 minutes on each side, just to brown the skin.

  4. Prepare all ingredients: fry chopped onion; skin and chop tomatoes; press garlic; mill black pepper. Place turkey wings into cast iron casserole. Add fried onion and chopped tomatoes.

  5. Add almost all pressed garlic (set aside 2 cloves), add 1½ tsp of coriander seeds (set aside ½ tsp of seeds), add chilli, milled pepper, salt and wine. Also add 50-75 ml of water. Bring to boil and cook under lid at low heat for about 1 hour.

  6. Add chopped basil, and leftover pressed garlic and coriander seeds. Cooked for 5 more minutes.

  7. Serve with rice.



tips and tricks

  • Cast iron casserole is absolutely irreplaceable for braising turkey wings, because thin pan will not make such perfect cooking environment.
