To preserve all the juice form inside the meat, steak should be reasonably thick. This recipe will shows, how to cook thick (2 inch, or 5 cm thickness) rib eye steak, without special equipment. To do this, it is necessary to use frying and roasting techniques together.
Thick rib eye steak, about 2 inches thick.
Milled black pepper
Thyme or rosemary sprouts.
Preheat oven to 200-250 degree C. Cover steak with olive oil. Sprinkle with freshly ground black pepper and salt.
Preheat heavy casting iron skillet. Fry steal on one side for two minutes. Why two minutes? Because two minutes is the maximal time of frying, after which the surface of the meat starts burning.
Fry steak on other side for two minutes. You can add some thyme or rosemary during frying. Repeat previous and this steps again, with total frying time about 8 minutes.
Put meat on thin roasting tray and oven roast for about 5-10 minutes, depends on the required doneness.
Remove rib eye steak from the oven and keep them for 3-5 minutes to have a rest and allow meat juices to distributed inside. Slice diagonally across the meat grains and serve. This is a medium rare rib eye steak.
