This oil can be used for cooking pizza, or for sea food barbecue as a basting oil. The main flavour ingredient in this oil is garlic, but you can use any combinations of herbs. The very strong and sharp aroma of garlic and herbs will be reduced during cooking with this oil, but the hot flavours from the chilli will stay forever - this is the only rule, which you should remember when combine herbs for this oil. Making this oil is very simple, and can be performed by chiefs with any cooking skills, but the result will always be perfect.

  1. Ingredients for half litre of oil.
    • Olive oil, ½ litre.
    • Garlic, 4 large bulbs.
    • Thyme, very large bunch
    • Rosemary, few spouts

  2. Peel garlic and press into large tray. Add all herbs and cover with olive oil. Now you can either keep it at room temperature for few days for maturation, either warm up in water bath to 50 ° C and keep for 30 minutes (just place bowl with oil and herbs into larger bowl with very hot water from the tap or kettle. tips and tricks

  • Because of the very strong garlic flavours, this oil is not very suitable for salad dressing, but if you prefer very strong garlic in you salad – you can use it as well.
  • Add 1-2 hot chilli to make aromatic olive oil a bit more hot.
  • For good fish grilling it is necessary to have up to about ½ aromatic butter, because plenty of oil will be loosed by dripping on charcoal.
