Some food requires very high temperature for cooking. This is achievable by cooking over the real charcoal on the grill, which is not always possible to do at home. In this recipe I will tell how to grill asparagus at home with using casting iron frying pan (heavy steak pan). This is very simple and almost smokeless, which make this recipe suitable for standard kitchen. This grilled asparagus will be perfect side dish for almost any meat or poultry dishes. Grilled asparagus is so light, that it is possible to eat plenty of stems at once, but for an average portion cook about 5 stems.
Ingredients for three portions.
Green asparagus stems, 15 stems.
Bamboo sticks, brush, heavy casting iron frying pan.
Wash asparagus stems, and stick each 5 asparagus stems together with bamboo sticks. Chop the hard ends to make these blocks looks more neat.
Brush each side of the block of asparagus stems with olive oil.
Mill rock salt on each side of these asparagus stems. Plenty of salt will be lost during cooking, so, do not worry to put some extra salt.
Preheat casting iron frying pan and lid to a medium-high temperature (150-180 °C). Cook under lid for about 4-5 minutes. In not sure, just check the bottom side of asparagus, some black burns should appears.
Turn asparagus blocks upside down and cook another 4-5 minutes under lid.
Serve and enjoy.

Good heavy lid is very important. Lid create worm environment for better cooking, and also, lid keeps plenty of smoke inside.
