Stew is a very popular dish, and this is very obvious. Firstly, stew can be cooked from tough meat; Secondly, stew is very tender and tasty. Also, stew is very easy to cook and results are always very good, if you do everything properly. Average portion should contain about 250gm of raw meat.
Ingredients for 6 good portions
Chuck steak, 1.5 kg. This meat should be from the calf neck, this is the best cut for stew.
Onion, 4 average bulbs.
Medium bunch of coriander.
150 ml of double cream.
Long pepper, 4-5 sticks, or 1 tsp of black pepper.
2-3 tsp of salt.
Olive oil, 1-2 tbsp.
¼ pint of water. Use boiling hot water.
Remove large tendons and fat from the meat. Chop meat into a small cubes.
Fry meat pieces on oil on high heat for few minutes, only to make better taste. This step is not crucial, and you can omit it easily. The taste will be slightly different, but the overall dish will be great!
Chop onion into a small cubes and brown them slightly to improve taste. Again, browning of onion is not very crucial step, and you can use raw chopped onion.
If you've use frying pan, deglaze it with hot water and place all ingredients into a casserole or Dutch oven and bring it to boil. Then reduce heat to the lowest possible, tightly close with lid and cook for 4 hours.
Add chopped coriander and double cream, mix everything together and serve.
Serve with mash or other similar side dishes.
tips and tricks
Chuck steak is the best, but you also can use, shin, brisket or ribs, but chuck or neck is the best.
You can also use slow-cooker on high power instead of casserole, this is even safer and sometimes easier.
