Razor clams, or razor shells are very popular in many oriental cuisines, but unfortunately almost forgotten in traditional English and Scottish cuisine. In this recipe, we will increase the sweetness of razor clams with honey, salt them with soy sauce and balance the taste with the drop of the lemon juice. These sweet razor shells are perfect as a starter and as a main meal.

Ingredients:
Razor clams, dozen.
Garlic, one bulb. Use 3 gloves for honey sauce and the rest for the wine boiling.
Thyme, small bunch
Parsley, small bunch
Coriander, small bunch
Soy sauce, 3 tbsp
Honey, 2 tsp
Lemon juice, juice from half of lemon.
White wine, half pint, use wine with floral aroma.
Bread crumbs, 2 tbsp
Sesame seeds, 1 tbsp
In a shallow pan bring to boil wine with thyme, parsley and almost all garlic, pressed with knife.
When wine starts boiling, add razor shells and boil under lid for 3 minutes.
Remove razor shells from the pan and chill them down at room temperature.
Discard any unopened razor shells – they are not fresh. Clean the razor shells. Remove meat from the shells. Leave shells for the future cooking. Remove food bags from the meat.
Finely chop razor shell meat and fill shells with this meat. It is much better to fill one shell with the meat of two razors clams. In some nasty restaurants, shells are filled with the mixture of razor and mussels meat.
Cover meat with soy sauce mixture.
Sprinkle with the bread crumbs. Place tray with razor clams under the top grill and grill until the shells starts brown.
Remove shells from the grill and serve.
tips and tricks
Never use not very fresh razor shells.
For better results, mill bread crumbs to a fine powder.
