This is a very old recipe, of cooking potato. Originally, many tribes and travellers cook potatoes in the hot ashes of the bonfire. To repeat this recipe exactly, you should have plenty of wood or charcoal burned on the ground, before cooking. Here we will give and idea how to use lumpwood of briquette charcoal barbecue to quickly make this baked potato and do not loose the original taste and character of this dish.

To bake potatoes, you should to have potatoes, I think this is obvious. So the ingredients are:
Potatoes, 2-3 per portion. Use only high quality potatoes without dents and large black spots.
Salt, use simple cooking salt.
Any oil.

Do not pile potatoes, just clean them from soil, sprouts and large black spots. Discard potatoes with large green areas. Boil potatoes for about 20 minutes in the well salted water. Do them almost cooked, which is very easy to check with poking potatoes with bamboo skew. When the skew easily goes through potatoes – it is ready for this step. Discard all water.
Prepare foil sheets about 30x30 cm, one foil sheet per each potato. Brush potato with oil and sprinkle with salt. Wrap tightly each potato with foil and go to charcoal barbecue.
When the temperature drops to a medium level, shake the charcoal and bury potatoes into the hot charcoal. Change the position of potatoes after about 5 minutes. In total, cooking time is about 10-15 minutes.
Remove potatoes from the charcoal and leave for 5-10 minutes to chill them downs slightly.
Remove potatoes from the foil and serve. It is very interesting to serve such baked potatoes as an accompaniment for other barbecued meats and fishes. Also serve this potatoes with some aromatic butter.
