How to grill large shrimps with green butter and garlic
Large shrimps are very delicious food with very gentle taste and aroma, and it is quite difficult task for the chefs to not only preserve these shrimps taste and aroma, but even improve them. This recipe will give very simple way to cook shell on shrimps on grill with preserving of all their taste. Originally, this recipe was considered as a perfect food for parties, but after some comparisons with other restaurants shrimps, it is possible to recommend this grilled shrimps with aromatic butter as a restaurant food. This dish is so perfect, that if you serve is as a starter, one adult can consume a kilo of such shrimps.

step-by-step instructions

  1. Ingredients. This is a high class dish with quite expensive compounds, and there is a very bad practice to save some money on other ingredients. Use only very high quality ingredients.
    • Large shell on shrimps. 1 kg, dozen of shrimps.
    • Salted butter, 125 gm
    • Fresh parsley, one medium bunch
    • Fresh dill, one medium bunch
    • Garlic, 1/3 bulb
    • White pepper, 1/4 tsp
    • Salt, 1/4 tsp
    • Olive or vegetable oil
    • Lemon for serving

  2. Finely chop dill and parsley, remove all the hard bits.

  3. Mix room temperature butter with chopped herbs, and 1/4 tsp of white pepper. Add up to 1/4 tsp of salt if you prefer more salted final dish.

  4. Cut shrimps stomach alongside from the head to the tail. Do not cut the shell on the back and leave about of 1/4 of shrimp meat uncut. Do not worry, if in some parts of the shrimp's tail the meat will be cut through completely.

  5. De-vain shrimps and wash them from leaked internal organs, like liver etc. Dry shrimps with paper towel.

  6. Cover baking tray with foil. Grease a tray with olive or vegetable oil. Place shrimps, back side down. Finely chop garlic and add it inside the shrimps body.

  7. Preheat oven to 200-220 ° C. Cook shrimps under grill 5 minutes. This is very important to use oven and grill, otherwise the bottom parts of shrimps will not be cooked through.

  8. Fill the open shrimp's tails with salted butter with herbs. If the shrimps are not cut, then just top shrimps with butter.

  9. Grill them for 3-4 minutes, depends on the distance to the grill. Some thin bits of the shrimp's shell, like tails or legs can turns black.

  10. Serve shrimps on the plate and sprinkle them with the melted butter from the bottom of the tray. Add quoter of lemon for further sprinkling.



tips and tricks

  • It is possible to do not cut the shrimps before cooking. The will be with all the stomach content, but much more juicy.
  • If the oven do not have a top grill, working with the oven together, cook shrimps for few minutes at the bottom part of the oven.
