Temaki-zushi, or hand-rolls sushi are very easy to make and they are great for any party. Furthermore, these temaki-zushi are prepared from cooked salmon, and therefore are much safer and can be stored for some time.
step-by-step instructions
Ingredients.
Salmon skin.
Sushi rice.
Moist vegetables. For example cucumbers, or avocados.
Crispy vegetables. For example rocket salad will be perfect.
Toasted seaweed, or yaki-nori.
Roast salmon skin without any oil, skin down, until it will be crispy. You can season it with salt, but it is not necessary.
Roasted salmon skin should looks like this on the picture.
Cut yaki-nori sheets into two halves. Also cut cucumbers, or avocado into long thin stries.
Cut roasted salmon skin into long, 1 cm wide stripes.
Put 1 tbsp of sushi rice on the yaki-nori as shown on the picture.
Put sliced cucumber and salmon skin stripes on sushi rice.
Put rocket salad on top.
Follow the picture to fold this construction into a proper cone. Fold near corner of the yaki-nori.
Continue to roll to make a proper cone. Serve on the large platter.
tips and tricks
Serve with soy sauce, wasabi paste and pink pickled ginger (gari)
To make this hand roll more tightly bonded, seal the end of the yaki-nori with one smashed sushi-rice.
