How to make Caucasian sauce for grill
Good sauce can improve poorly cooked meat or vegetables and make unforgettable perfectly cooked meat. In this recipe, I will show how to make a very simple but very delicious sauce for any grills. This sauce can be suitable for grilled meat, burgers, vegetables, and even steaks! The simplicity of its cooking makes it suitable for beginners. So let's do it, and we can turn our BBQ party into a restaurant experience.

In this green sauce recipe, I will refer to the Caucasian traditions of making very herby combinations for meat and will do something similar. But it is not a classical or traditional sauce, it is just an application of cooking ideas to existing ingredients and real taste.

step-by-step instructions

  1. Ingredients. It is very approximate. You can adjust all the ingredients to your taste and preferences. How much sauce? You will make 300 ml of sauce, but it is so nice that it can be used by one person!
    • tomato passata: 250 ml.
    • Garlic - 4 cloves
    • Pickled gherkins - 4-5 small one. I prefer to use gherkins instead of vinegar, which add to the texture and have milder taste.
    • Dill - small bunch
    • Coriander - medium bunch. The idea of this sauce is to pair tomatoes with coriander - this is the main taste character!
    • Spices:
      • Salt - to taste (I'm obvious) but 1/2 tsp will be perfect in most cases
      • Hot chilli - 1/4 tsp will be good enough, but if you prefer a very hot version, then you can add some more or even use fresh chilli.
      • Khmeli suneli - 2 tsp. This is a crucial spice, but it can be made as a mixture of:
        • ground coriander seed
        • dried Italian herbs
        • blue fenugreek
        • summer savory

  2. Mix all ingredients slightly chopped in a blender bowl and blend them to a rough sauce. Do not overdo it. That it... sounds pretty simple.
