Today we will do a summer variation of the simple breakfast with soft-boiled duck eggs and with fresh asparagus. Officially, the St. George day in England is the day of asparagus festival, and it is a good to serve this breakfast at this lovely day.

  1. Let's be simple with this breakfast. Fresh duck eggs, fresh, juice and sweet, green asparagus, pinch of sea salt and maybe a toast with butter. Nothing else.

  2. Bring water to boil in a not very big pan. Carefully put duck eggs into a boiling water and boil them for 5 – 5½ minutes. After this time, pour cold water over the eggs, to bring the temperature slightly down.

  3. Trim the solid, woody end of asparagus. Bring salted water to boil, and put asparagus ends into the pan with this water. Boil them until the turns soft. Usually it will take 3 minutes. Remove from the boiling water. It is very convenient to cook asparagus, while the eggs a boiled in other pan.

  4. Prepare a toast with butter, or just a slice of freshly baked loaf with butter. Open the top of the duck egg, add pinch of sea salt... and dig the duck egg with asparagus end.

  • It is very important to keep eggs boiling time exactly, otherwise the duck eggs will be not cooked properly.
