This recipe is not for English traditional baked potatoes. Just another way to make potatoes very quickly and very simply. This baked potatoes will be perfect side dish to almost anything really. Also, this dish looks very attractive, and can be used for serving posh parties.

Potatoes, as much as you need for one meal. Skin potatoes and keep then in cold water, to avoid oxidation. Also prepare olive oil, salt, black pepper and thyme.
Cut each potato into halves.
Make a very deep (almost till the end) notches each 3-5 mm on the spherical side of half-potatoes.
Spray 1-2 tbsp of olive oil into a ceramic baking tray. I personally think, that ceramic tray will be much better rather than thin metallic baking tray.
Place potatoes cut side down, and cover them with olive oil and sprinkle with salt and milled pepper. Add a bit of thyme leaves. Oven-bake at about 200 °C.
Each 10-15 minutes moisturise baking potatoes with oil from the baking tray.
When potatoes became soft with lovely crust (approximately after 40-45 min), remove from the oven and serve.
