How to make simple pizza at home
Everybody like pizza! But not many chefs can do it without proper pizza oven. Today I will tell you how to make simple pizza at home with cast-iron pan and grill. And this simple pizza made at home will be very competitive with high street pizza restaurants.

For better understanding, I’ve make simple video, about how to make pizza at home, which will be very helpful for understanding full process. I’m using very simple techniques? For making pizza with very simple ingredients, and the main idea of this story is to show you, how it is possible to bake this pizza with simplest equipment, rather than pay much attention to recipe details.

step-by-step instructions

  1. Ingredients are very important. Use the best quality products and you will have good results. In future articles I will give you more details about every simple step, but for now, just give simple ideas. Also, this ingredient list is a bit unusual for me, instead of giving exact measures, I will tell you – to your taste. This is because, your taste can be different, and the taste of all ingredients can be very different! Therefore add and try.
    • Pizza sauce for 8 pizzas:
      • Olive oil – 1 tbsp
      • Banana shallot – 2 onions
      • Chopped tomatoes – 400g tin
      • Salt – 1 tsp – adjust to taste
      • Sugar – 1 tsp – adjust to taste
      • Italian herbs – 1 tbsp – adjust to taste
      • Black pepper – ½ tsp – adjust to taste
      • Hot red chilli – strictly to your taste and idea of pizza
      • Balsamic vinegar or balsamic glazing – 1 tbsp – adjust to taste
    • Pizza Dough for 8 12in pizzas:
      • Strong white flour (00) - 500g
      • Warm water - 325ml
      • Salt - 1 tsp.
      • Sugar – 1 tsp
      • Dry Yeast - 7g
    • Garlic butter for basting:
      • Unsalted butter - 100g
      • Garlic – half bulb
      • Thyme & rosemary for brush
    • Toppings
      • Simple mild cheese for main cheese layer – adjust to taste
      • Strong cheese for final toppings – adjust to taste
      • Cooked meat, sausages, mushrooms, onion, pineapple – adjust to taste

  2. First of all make tomato sauce for pizza. Later, I will give more details about this sauce, but here I will give you some basic idea.

    1. Finely chop shallot and fry it on olive oil until translucent.
    2. Add chopped garlic, chilli (maybe a bit of ginger) and fry for 1-2 min
    3. Add chopped tomatoes from tin and a bit of water to was tin as well, bring to boil
    4. Add salt, sugar balsamic vinegar and all herbs and spices
    5. On low heat cook until required thickness, checking taste every so often
    6. Blend it with hand blender
    7. Chill down and it is ready to use

  3. Pizza dough preparation. Actually, you should start to do it about 8 hours in advance, to make enough time for yeast to grow.

    1. In warm water dilute sugar, table spoon of flour and yeasts, and leave in warm place for 20-30 minutes to start yeast action. If yeasts are dead – change water and try another yeasts.
    2. Sift flour with salt
    3. Mix flour with yeasty water
    4. Knead dough to develop all proteins
    5. Separate into portion sizes (200gm for 12in pizza) and make perfect balls
    6. Store in pizza tray or any other non-sticking tray on flour or semolina to develop yeasts, about 5-8 hours

  4. Just before cooking pizza, prepare garlic butter for basting

    1. Make brush from thyme and rosemary
    2. Melt butter in small saucepan
    3. Add pressed garlic, mixing with herbal brush
    4. Keep it melted warm, but not boiling all cooking time

  5. Pizza making is fun! Preheat pan to 220-250 °C and preheat grill to a maximum temperature and start make pizza:

    1. Roll dough ball into pizza base of appropriate size. 200 gm is perfectly suitable for 12in size pizza base. Don’t forget to use appropriate amount of flour or semolina to avoid pizza sticking to the dough board.
    2. Spread tomato sauce up to 1/2inch to the edge
    3. Sprinkle with base cheese
    4. All all required ingredients. Just remind again to twist any sausages (but not peperoni) for better cooking experience.
    5. Sprinkle with strong flavour cheese
    6. Sprinkle with garlic butter
    7. Place pizza on pizza spade

  6. Pizza cooking, quick and easy

    1. Place pizza on preheated pan
    2. Place pan under hot grill
    3. Cook 3-5 min checking every so often
    4. Remove from grill and brush with garlic butter again
    5. Place pizza on table and cut with pizza rolling knife
    6. Serve and enjoy
