Yaki onigiri is a traditional Japanese side dish, or even whole meal, cooked only from short grain rice on the charcoal grill. Basically, yaki onigiri, is a grilled rice balls, sprinkled with some lovely sauce, caramelized on the surface during cooking. It is possible to say, that these rice balls where popular in Japan over centuries. To cook miso yaki onigiri, it is necessary to have Japanese sushi rice (short grain rice) and miso paste.
Prepare sushi rice, but do not add any vinegar and sugar. Read below, how to prepare sushi rice in details. Think about ½ cup of dried rice per one portion.
Make one portion rice ball and roll it between your hands to make it solid.
Squeeze rice balls to make them flat, and form them into a triangular shape of about 1 - 1½ inch thick. Also mix ¼ cup of red miso paste with ¼ cup of water.
Preheat grill to medium (or just use side area of the grill, away from the central hot area). Place rice balls on the cooking griddle and cook about 2 minutes.
Brush top of the rice ball with miso paste and turn it over. Brush other side with miso and flip it again. Flip each 30 seconds. Also cook on the edges, about 20-30 seconds on each edge. The total cooking time should be around 8 minutes, until the surface turns dark-golden, crispy and caramelized.
Use a side dish to grilled meat.
tips and tricks
Be careful, to do not burn hands, when shaping cooked rice into a rice balls.
Before working with cooked rice, water hands, and keep them wet all the time.
It is possible to add finely chopped green onion or garlic or shichimi togarashi, or any other flavours to the miso sauce before using.
