How to make prawns fried rice

  1. Ingredients for three portion meal.
    • Cold boiled rice. From 200 gm of dry rice.
    • Small boiled peeled prawns, 200 gm
    • Eggs, 3
    • Vegetable oil, 2 tbsp.
    • Roasted sesame oil, 1 tbsp. This is a very important ingredient!
    • Garlic, 1 clove
    • Hot chilli, 1/3 of a small mild-hot chilli fruit.
    • Scallion, 1-2 plants
    • Soy sauce, 3 tbsp.
    • Salt, pepper to the taste

  2. Slightly beat the eggs with sesame oil, salt and pepper. Add salt as much as necessary to make egg salty.

  3. Mix peeled prawns with mashed garlic, pinch of salt and pepper.

  4. Finely slice green onion and chilli.

  5. Use one tbsp of vegetable oil to fry prawns. Roast them about one minute and temporary store them somewhere else. Keep all the juice as well.

  6. Stir fry beaten eggs with one tbsp of vegetable oil. Constantly stir eggs, to make scramble eggs.

  7. When the eggs will be almost ready, but with some liquid bits inside, add sliced chilli and stir again.

  8. Add cold rice and stir-fry it for about 3 minutes. During this frying procedure, try to mix eggs with rice as good as possible.

  9. Add three tea spoons of soy sauce and stir again.

  10. Add cooked prawns to the rice and eggs and fry for another 3 minutes.

  11. Add chopped green onion, stir and switch of the heat. The dish is ready.

tips and tricks

  • If the rice is to old, wash it in the cold running water.
  • Do not hesitate to add as twice as much prawns.
  • Serve with extra soy sauce
  • Use as a side or main dish
  • Small prawns will give much better results in compare with the large one.
