Bahalina

Bahalina is a traditional Filipino red coconut wine that is made from Tuba by adding bark from mangrove trees (Indian mangrove, Asiatic mangrove or White dammar - whatever is available). These barks (barok — sun-dried bark from tannin-rich mangrove trees) are full of tannins and rich in red-brown colour. As a result, the bahalina is red-brown in colour and pretty tangy in taste.

Bahal vs Bahalina

After one day of tuba fermentation with the mangrove bark, it turns into a bahal - it is already a very pleasant drink, but very cloudy. This bahal is already a popular drink and can cost 100-200 pesos per gallon. Because of the tannins, it is very stable and does not go off quickly. It is possible to mature it for a long time.

Bahal is regularly filtered for a few days and fermented in cold conditions, which turns it into a clean and more alcoholic drink, which is real Bahalina. Usually in the Philippines, they use the name Bahalina for any of these drinks, which is a bit confusing.
