About red perch
Red perch is a very popular cooking fish, which can be used for many different ways of cooking. Firm tasty flesh can be perfect fried, baked, boiled, salted, grilled and stewed.
On the market, Red Perch can have plenty of different names, most common of which are: rose fish, ocean perch, Atlantic redfish, Norway haddock, red bream, deepwater redfish, hemdurgan, golden redfish or beaked redfish. All these fishes are belongs to two different species Sebastes mentella and Sebastes norvegicus, but exact classification is not always possible, because of lack of head on the sold fishes. Nevertheless, for culinary purposes, such classification is not very important, because these fishes are very similar.
If you have a choice, it is much better to buy as large fish as possible. Large, mature fishes have better fat content and more tastier meat.
